pumpkin choc chip cookies

 
I have been testing the cooking waters
a bit more lately, though.
 I go through phases
where I love to try cooking new recipes
and then don't like it at all.
Probably because I never really learned
to cook and haven't taught myself,
so I try and just teach myself along and along.
I think the waivering is often based on how well
the last cooking attempt(s) went.

Not that I completely can't cook...
I can follow a recipe pretty well
if it is straight forward,
but I cannot create dinners out of random pantry
ingredients or tweak recipes and have them taste good,
which I guess is how I define someone that knows how to cook.

So I muddle along and try things I think will be easy
and tasty and most of the time they are, eh, so-so.
But every few weeks I'll find some different recipes
that appear promising and get the urge to try again.
So goes the learning process...

This week I made two batches of crockpot salsa chicken,
 homemade baked chicken nuggets,
homemade mac 'n cheese,
and pumpkin chocolate chip cookies.
Yay for me, and yum!

I found this cookie recipe on Imperfect's
blog (see my sidebar) and tried
it out last night. It did make a huge batch
so I made a few and froze the rest of the dough.

It isn't overwhelming with pumpkin
flavor, but was good and spicy and fall-ish
to go with this cooler weather that has rolled in.
They are kind of a cake-y cookie,
soft/chewy/cakey...but I thought they were
pretty good. They got the negator from B because
he doesn't like pumpkin...but I guess that doesn't count.

In case you want a taste of fall
or like pumpkin pie and chocolate, 
straight from Imperfect and her taste tester (me):
1 can pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
1 cup all-purpose flour
1 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
1 bag semisweet chocolate chips

Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, pumpkin pie spice, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
Add vanilla and chocolate chips.
Drop by spoonful on greased cookie sheet and bake at 350 degrees F
for approximately 12 minutes or until lightly brown and firm.
You can bake half and freeze half in log form for slice and bake cookies later in the Fall.

  1. Was thinking about you just yesterday and wondering how things were going since I hadn't seen a post in awhile :) This look yummy, but would probably be a "no" for my B as well. Maybe I'll make some for work! Thanks for sharing!
